
Here are the ingredients:
1 small 1lb butternut squash, cut in half, seeds and fibers removed
1 acorn squash (about 1 1/2 pounds)
1 lean pork loins, about 1/2 inch thick (about 1 pound)
1 teaspoon dried sage leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
1 medium onion, cut into 1/4-inch slices
1/2 cup chicken broth
1 medium granny smith apple, cored and cut into eighths
1/2 cup diced granny smith apple
2 teaspoons packed brown sugar
2 teaspoons margarine or butter, softened
1/2 teaspoon lemon juice
pinch of ground nutmeg
The whole dinner from beginning to end should not be more than 45 minutes. First you should start on the Acorn dessert and let it bake and then work on your tenderloin entre. It will just be perfect timing when the dessert is done, the tenderloin should be as well.
For the Acorn dessert, heat oven to 400°. Place squash halves cut sides up in ungreased rectangular baking dish. Mix brown sugar, butter, lemon juice, diced apple and nutmeg; spoon into squash. Cover and bake 30 to 40 minutes or until squash is tender.
Now for the tenderloin entre, mix sage, 1/2 teaspoon salt, 1/4 teaspoon pepper and the garlic, rub on both sides of pork. Splash some vegetable in the skillet and let it warm up, throw in the onion and brown a little. Then put the pork in for about 3 min, brown both sides. Pour broth around pork. Heat to boiling; reduce heat.Cut squash crosswise into 1-inch slices; remove seeds and fibers. Cut each slice into fourths. Place squash and apple on pork; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover and simmer about 15 minutes or until pork is slightly pink when cut near bone and squash is tender. If the mixture looks dry, pour some more chicken broth in it, liberally.
If you prefer some bread or biscuit, you can warm it up in the oven.
When the tenderloin is done, the dessert should be perfect.
